What do you mean? You mean how can you use more than the standard font selections in DW layouts?
Go to Text | Font | Edit Font List and add whatever fonts you like with the alternates like the existing sets.
Be warned though users browsers will only show the fonts they have installed so what might look "cool" on your PC might look crap in Times New Roman on everyone elses machine that does not have Fancy Script MS or whatever . The list is quite short for a good reason- these are the standard fonts almost everyone has.
