When I connect manually to MySQL and run the following Query:

<b>SELECT DATE_FORMAT(NOW(),'%M')</b>

It returns "<b>May</b>" - jolly good stuff!

Then I go into Dreamweaver.....

<b>No Recordset was returned</b>

an ordinary query like <b>SELECT * FROM users</b> brings back results, so it is connecting.....any ideas?

You question doesn't make any sense. Can you explain a little bit more please.
