Hi - please excuse my ignorance I'm a complete novice to server side design! I'm thinking of trying my hand at PHP and wondered if you can use MS Access databases with it rather than MySQL which I dont have!

Yes you can but its not worth it. Php is better off using MySQL. Am not saying that becoz i kno nothing abt Access but you'll find out that most of the time PHP is being used with MySQL.

mysql is free, and ten times better
