IMHO preferences and general settings are usually best reset directly - copying general preferences files can be sketchy.
You can export your site definitions (from the Manage Sites window) and then re-import them into the new installation later. This gets the bulk of your settings moved over.
Snippets are located in /Configuration/Snippets (I believe), you should be able to copy that particular configuration file right over.
Third-party extensions can be trickier- I'd reintall the MXP files on the new system/installation just to be safe. Extensions can change your menu structure, so IMHO it's always better to install them fresh on new systems/installations.
Hope this helps get you started!
