Hummm am I missing something or we can't see file details anymore, in the Site Files Pane? Of course, if we can't see them, we can't sort the files by date or size... hum?

(on OSX, so apologies if this varies on other platforms)
In the panel, no, the columns aren't sortable- but there is a trick- you can click the 'Expand/Collapse' button (last icon on the right of the Files panel) and expand the view to the old floating remote/local files view, in which case the columns *are* sortable. At least in my case, whichever sort order I had the expanded view set to last, the collapsed (i.e. panel) view retained.

Haven't tried this w/the Win version- if it doesn't work the same, please speak up.
